Hi Larissa! As always, your newsletters are so interesting! This time, as always, my two burning questions are these: Please remind me again why the alt-meat industries think we need these alternative forms of 'meat'? Is it primarily for the fast food market? To me, I'd rather dig in to a plate of well-spiced, time-honored, and delicious grain and legume combos with lentils, chickpeas, black beans, etc. And more importantly, how well are these foods digested? For example I know I have to use tofu very sparingly because my digestion is challenged by anything so highly processed.

Hi Mireya, these founders are worried about climate change and animal welfare and want to give people an alternative that mimics meat and can replace meat entirely. (There aren't enough people like you and me that are happy with traditional whole foods that are plant based.) It's not for fast food, it's to make big change. The book "Diet for a Small Planet" came out in the 70s saying many things that are said today, but we never saw a big enough shift--people haven't stopped eating meat. So this is another effort to get people to stop eating animal meat. As for tofu, maybe try different brands as an option? Some things with soy bother me, and just as often I'm fine.
