Welcome to the very first paid member newsletter. I had so many ideas for this first leap into special coverage. Lab-grown caviar came to mind, but since it’s summer I thought I might do something a little more effervescent. Don’t worry, I’ll come back to things like cultivated caviar and tasting other curiousities in my work life.

The N/A world, or non-alcoholic, is growing rapidly. According to Global Market Insights, this category is expected to grow to $30 billion by 2025. If you’re not aware it exists, I promise you it does. It includes canned cocktails, spirits, beer, hop water, and more, but I’m devoting this edition to wine. Sidebar: While N/A beer is much further along and a better match to the original, beer is lower in alcohol than wine and an easier subject to mimic.
